Baked Oatmeal & Fruit

INGREDIENTS

  • 2c. rolled oats
  • 2 Tbsp. brown sugar
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • ½ tsp. salt
  • ½ c chopped walnuts
  • 1 c. strawberries, sliced
  • ½ c. blueberries
  • 2 c. almond milk
  • 1 egg
  • 1 Tbsp honey
  • 2 tsp. vanilla extract

1. Preheat oven to 375°F . Grease baking dish with cooking spray. Set aside.
2. Mix oats, brown sugar, baking powder, cinnamon, salt, half the walnuts, half the strawberries and half the blueberries in mixing bowl. In another large bowl, whisk together the milk, egg, honey and vanilla extract. 
3. Add the oat mixture to prepared baking dish. Arrange the remaining strawberries, walnuts and blueberries on top. Gently shake the baking dish to help the milk mixture spread throughout the oats.
4. Place the baking dish on top of a baking sheet and bake for about 40 minutes (or until slightly golden brown), or the milk mix has set.
