Grilled Chicken and Spaghetti Squash

Grilled Chicken & Tomato Spaghetti Squash.png

1-2lbs. Chicken breast
2 tsp salt & pepper
1 large spaghetti squash 
2 cloves garlic, minced
1 cup freshly grated Parmesan cheese - depending on preference

  1. Preheat the oven to 375 degrees F. Cut the squash in half lengthwise, scoop out seeds and sprinkle with olive oil, salt and pepper. Bake, face down, on a foil lined baking sheet for an hour.
  2. In a saute pan, heat olive oil and garlic until fragrant.  Cook chicken in pan until done, (165) I used garlic powder and cayenne pepper to season.
  3. Let squash cool and shred the squash with fork. 
  4. Add the parmesean cheese to spaghetti squash and toss to thoroughly combine and until heated through. Adjust seasoning, if necessary and serve immediately..
