Grilled Chicken and Spaghetti Squash
1-2lbs. Chicken breast
2 tsp salt & pepper
1 large spaghetti squash
2 cloves garlic, minced
1 cup freshly grated Parmesan cheese - depending on preference
- Preheat the oven to 375 degrees F. Cut the squash in half lengthwise, scoop out seeds and sprinkle with olive oil, salt and pepper. Bake, face down, on a foil lined baking sheet for an hour.
- In a saute pan, heat olive oil and garlic until fragrant. Cook chicken in pan until done, (165) I used garlic powder and cayenne pepper to season.
- Let squash cool and shred the squash with fork.
- Add the parmesean cheese to spaghetti squash and toss to thoroughly combine and until heated through. Adjust seasoning, if necessary and serve immediately..
