I can seriously find any excuse to make a meal that uses cilantro - I love it that much! This is best for cold nights and can be whipped up in less than 20 minutes if you're *starving*. Homemade shredded chicken taco soup (no tortilla!) with avocado, black beans, corn & bell peppers.
