Metabolism Boosting Cabbage Soup

INGREDIENTS

  • 2 Tbsp extra virgin olive oil
  • 2 c. chopped onions
  • 1 c. chopped carrot
  • 1 c. chopped celery
  • 1 c. chopped poblano or green bell pepper
  • 4 garlic cloves, minced
  • 8 c. cabbage, sliced thinly
  • 1 Tbsp tomato paste
  • 1 tsp ground cumin
  • 4 c. chicken broth (i use low sodium)
  • 4 c.water
  • 2 c. black beans
  • ¾ tsp salt
  • ½ c. cilantro
  • 2 Tbsp lime juice
  1. Heat the oil in a stockpot over medium. Add onion, carrots, celery, bell pepper & garlic. Cook for 10-12 minutes, stirring frequently. Add in cabbage and cook until leaves are soft, approximately 10 minutes.
  2. Add tomato paste and cumin. Stir. Add water, chicken broth, black beans. Stir to combine. Cover and bring to a boil. 
  3. Reduce heat and simmer for ten minutes.
  4. Remove from heat, and serve with avocado, cilantro garnish or other optional toppings. (I added greek yogurt and Sambal Oelek!)
