Mug Egg Scramble
- Three Eggs, 2 whole eggs, and one egg white (separate and discard third yolk)
- 1/8 tsp. pepper
- Optional - diced tomatoes, bell pepper and chopped spinach, avocado
- Crack eggs in mug.
- Add tomatoes, bell pepper and chopped spinach
- Whisk ingredients with fork until combined.
- Microwave for 30 seconds, and stir. Repeat two more times.
- Garnish with prefered hot sauce and half an avocado
