Mug Egg Scramble

  • Three Eggs, 2 whole eggs, and one egg white (separate and discard third yolk)
  • 1/8 tsp. pepper
  • Optional - diced tomatoes, bell pepper and chopped spinach, avocado
  1. Crack eggs in mug.
  2. Add tomatoes, bell pepper and chopped spinach
  3. Whisk ingredients with fork until combined.
  4. Microwave for 30 seconds, and stir. Repeat two more times.
  5. Garnish with prefered hot sauce and half an avocado
