Spinach and Egg Casserole
INGREDIENTS
- 5 oz. Spinach
- 1tsp. EV Olive Oil
- 1 1/2 c. Low fat Mozzarella Cheese
- 1/3 c. Green Onions
- 6 Eggs
- 1 tsp. garlic powder
- 1/2 tsp. pepper
- Pre-heat oven to 375 degrees F. Grease casserole dish. Heat EVOO in saute pan, and saute spinach until wilted. In a separate dish, beat the eggs with pepper and garlic powder. Stir in cooked spinach.
- Layer the Egg/Spinach mix with scallions and mozzarella.
- Bake 30-35 minutes, makes 6 servings. Enjoy!
