Spinach and Egg Casserole

INGREDIENTS

  • 5 oz. Spinach
  • 1tsp. EV Olive Oil
  • 1 1/2 c. Low fat Mozzarella Cheese
  • 1/3 c. Green Onions
  • 6 Eggs
  • 1 tsp. garlic powder
  • 1/2 tsp. pepper
  1. Pre-heat oven to 375 degrees F. Grease casserole dish. Heat EVOO in saute pan, and saute spinach until wilted. In a separate dish, beat the eggs with pepper and garlic powder. Stir in cooked spinach. 
  2. Layer the Egg/Spinach mix with scallions and mozzarella. 
  3. Bake 30-35 minutes, makes 6 servings. Enjoy!
