Huevos Rancheros
INGREDIENTS
- 1 tbsp butter
- 2-4 Corn Tortillas
- 4 eggs
- 1 can diced green peppers
- 1-2 jalapeños
- 1/4 white onion, diced
- 2-3 tomatoes
- 1 can low-sodium black beans
- low fat shredded Mexican cheese
- 1 c. mushrooms (optional)
- In a nonstick pan, melt butter & cook eggs over medium. Set-aside, warm tortillas.
- Layer tortillas with drained black beans. Put onion, jalapeño, mushrooms on top of black beans.
- Place egg on top, sprinkle lightly with cheese and add thinly sliced tomatoes, green peppers, salsa, pink sea salt and pepper to taste.
- Makes two servings. Enjoy!
