Huevos Rancheros

INGREDIENTS

  • 1 tbsp butter
  • 2-4 Corn Tortillas
  • 4 eggs
  • 1 can diced green peppers
  • 1-2 jalapeños
  • 1/4 white onion, diced
  • 2-3 tomatoes
  • 1 can low-sodium black beans
  • low fat shredded Mexican cheese
  • 1 c. mushrooms (optional)
  1. In a nonstick pan, melt butter & cook eggs over medium. Set-aside, warm tortillas.
  2. Layer tortillas with drained black beans. Put onion, jalapeño, mushrooms on top of black beans.
  3. Place egg on top, sprinkle lightly with cheese and add thinly sliced tomatoes, green peppers, salsa, pink sea salt and pepper to taste. 
  4. Makes two servings. Enjoy!
